Spicy Mac N Cheese

Ingredients

-2 cups of pasta
-1 tbsp. olive oil
-2 tbsp. butter, unsalted
-2 tbsp. flour
-1 tbsp. dry mustard
-½ tbsp. onion powder
-1 cup of milk
-½ lb. soft cheese, cubed.
-½ cup sharp cheddar cheese
-1/2 cup Salsa De Leon Hot
For cheese topping:
-1 tbsp. melted butter
-¼ cup seasoned breadcrumbs
-1 cup cheddar cheese

Instructions

Preheat the oven to 350 degrees.
Cook pasta until al dente and drain.
Add olive oil to cooked pasta, mix well.
In a separate pan melt butter, add flour, dry mustard and onion powder. Whisk until blended well.
Add milk slowly and whisk until blended.
Reduce heat and cook for 2-3 minutes.
Add cubed cheese.
Add Salsa De Leon and remove from heat.
Add cheddar cheese & whisk until melted.
Add pasta to cheese mixture and coat evenly.
Transfer pasta mixture to a baking dish.
For cheese toppings, mix all ingredients in a bowl.
Spread cheese topping over mixture.
Bake for 15-20 minutes until the cheese topping is melted and breadcrumbs are a golden color.
