Spicy Basil Pesto

2 cups fresh basil leaves, packed.

1⁄2 cup fresh grated Romano or Parmesan cheese.

1⁄2 cup extra virgin olive oil

1/3 cup pine nuts or walnuts

3 tablespoons Salsa De Leon – Hot

3 cloves garlic, minced

1⁄4 teaspoon salt

1⁄4 teaspoon black pepper


In a food processor pulse the basil and pine nuts.
Add the garlic, Parmesan or Romano cheese and Salsa De Leon and pulse several times.
Scrape the sides of the food processor.
Slowly pour in the olive oil while the food processor is running. This will help emulsify and help to
keep the oil from separating.
Add salt and black pepper.

Spread the pesto on bread for sandwiches, on the crust when making a pizza or toss with pasta for
a sauce.
